Floral Waters Distillery and Harissa-Making
Start your day with a traditional Tunisian breakfast, featuring fresh produce sourced from local farms. Afterward, dive into the world of Tunisian culinary traditions, focusing on two iconic staples: floral waters and harissa. In the region of Nabeul, close to Lamia’s home, the art of distilling aromatic flowers and herbs like rose, orange blossom, geranium, thyme, rosemary, and mint is a time-honored practice, especially in the spring. These fragrant waters are used to flavor drinks, enhance dishes, and even serve as remedies or part of rituals, such as greeting guests by sprinkling the water on their hands or heads. Following a demonstration of the distillation process, you'll have the opportunity to participate in a hands-on workshop, learning to prepare harissa. This essential condiment, made from crushed red chilies, accompanies nearly every Tunisian meal and holds a special place in the country’s cultural heritage, recognized by UNESCO. After preparing the harissa, you'll sample various versions of it alongside a delicious home-cooked lunch. In the afternoon, unwind at Lamia’s farm before enjoying a beautifully presented vegetarian dinner, crafted by a female chef and daughter of a renowned Tunisian artist. The meal will be served in their family’s elegantly restored home, just a short drive from the farm.
